Hemp Pesto Salmon Paillote

Ingredients for Pesto

  • 1/3 cup Hemp seed (from Oneroot honey)
  • 1/3 cup lemon juice (Freshly squeezed)
  • 1/2 cup kale (remove the stem) and baby spinach
  • 1/3 cup Hemp oil (from Oneroot honey)
  • 2 garlic cloves
  • 3 tbsp parmesan cheese powder
  • handful of parsley (no stem)
  • pinch of salt and pepper

Other Ingredients

  • Salmon (no skin)
  • Sliced lemon
  • olive oil, hemp oil to cook
  • Parchment paper
  • Your favourite vegetable with Salmon (for example green beans, brussels sprout...)

How to Cook

  1. Preheat the oven to 375º. Prepare parchment paper in a stoneware dish
  2. Place your option of vegetable, and salmon. Put oilve oil over it (1-2 tbsp)
  3. Put a small spoonful of pesto and 2 lemon slices on top of salmon fillet
  4. Fold Parchment paper to seal
  5. Bake for 15-20 min
  6. Transfer the salmon onto a plate and garnish with parsley and serve with remaining pesto sauce
