In searching for a Canadian honey I had two criteria: unheated and free of pesticides, herbicides, especially glyphosate which is everywhere now. This honey fit that bill, and the taste and consistency are great, possibly the best I have experienced. The consistency in particular is unlike anything I have seen in a creamed product; although very soft and smooth, the honey can form soft thin peaks that don’t flow back down. I can only attribute this to the product being not just “raw” (a deceptive term in many cases), but importantly, “unheated”. Usually the so called raw honey is heated to make it flow better, to make it easily to extract. So even if not sterile, the enzymes have been degraded. An unheated honey like this one is better and healthier, so it’s up to we consumers to demand unheated to create a market for it, because it is extra effort to make (but worth it). I commend One Root for making that extra effort.
